Berries are nutrient dense powerhouses
It’s almost summer time, and that means that it’s the season for delicious and juicy strawberries, blueberries + raspberries. Not only are they super delicious, they are also super healthy + nutritious.
Berries are superfoods packed with anti-oxidants, such as anthocyanins, ellagic acid, and resveratrol. These compounds help us against inflammation, protects our cells from free radicals and help us fight off disease.
Even more reason to incorporate these nutrient power houses in every possible way we can!
They are delicious in our smoothies, with yogurt, in a fruit salad and in many desserts, but they also make a great addition in salads, making salads even more nutritious + colorful!
Healthy + oil free dressing
The salad is coated in a honey, mustard and tahini vinaigrette. It’s a super healthy dressing without any oil! It’s one of my favorite new ways of making a dressing.
Lately, I’ve been replacing oil in dressings with neutral flavored nut butters, such as tahini. While olive oil is healthy for our heart, it also contains a lot of fat and calories so it’s best to consume it in moderation. Oil is also a highly refined product, while nut butters are just simply blended nuts. They are still whole foods that contain all of their nutrients and fiber contents, whereas oil does not, making nut butters a healthier choice in comparison to refined oil.
Even though nut butters are healthier than oil, they still add creaminess and a smooth consistency, making them a great alternative to oil in dressings.
This dressing uses the common ingredients for a vinaigrette. It has some honey for sweetness, natural apple cider vinegar for some acidity, mustard for a little punch but instead of gallons of oil, a little tahini for creaminess.
What ingredients do you need to make this anti-oxidant berry salad?
The ingredients are:
- lambs lettuce or lettuce of choice
- sprouts
- white beans
- strawberries
- blueberries
For the honey, mustard + tahini dressing:
- honey
- mustard
- tahini or nut butter of choice
- apple cider vinegar
- salt + pepper
How to make this salad?
Simply toss all the dressing ingredients together and toss all the veggies in a bowl. Coat with the dressing and enjoy!

Anti-oxidant berry salad + honey, mustard and tahini dressing

Ingredients
- For the salad:
125 grams lamb’s lettuce or lettuce of choice
50 grams sprouts
100 grams or more cooked white beans ( drained)
2 hands full of blueberries
2 hands full of sweet strawberries, halved
2 hands full of cherry tomatoes, halved
- For the honey, mustard + tahini dressing
2 tsp honey
2 tsp coarse mustard
3 tsp tahini
2 tbsp apple cider vinegar
Salt + pepper
Directions
- Arrange all the vegetables, the berries and the drained beans in a salad bowl or plate.
- Make the dressing by combining all the ingredients in a small bowl. Stir until dissolved. Season to taste with salt + pepper.
- Toss the veggies with the dressing and enjoy!
Notes
- You can add some feta or nuts + seeds, to make the salad even more filling.
