How to make these easy oat + cottage cheese high protein pancakes
These pancakes are ridiculously easy to make! It’s such a simple recipe!
To make the batter, you just add all the ingredients except for the butter/oil in a high speed blender or use a stick mixer and blend it until completely smooth. Then, bake them in a frying pan until fluffy. Meanwhile, you make the blueberry syrup by just heating up the ingredients in a saucepan and let it simmer for a short while. Serve the pancakes with the blueberry syrup and a few dollops of skyr or greek yogurt.

Here are some tips + suggestions to make this recipe a success:
- Bake the pancakes in a pan on medium to high heat. The pan should be hot before pouring in the batter preventing the pancakes from sticking onto the pan.
- You can keep the pancakes warm on a plate in the oven on a low heat setting while baking the pancakes.
- If you want the process to be faster, use multiple pans to bake the pancakes.

Oat + cottage cheese high protein pancakes with blueberry syrup

These healthy oat + cottage cheese pancakes are super fluffy! They make an excellent pre workout breakfast as they are full of protein!
Ingredients
- For the pancake batter:
75 grams oats
3 eggs
150 grams cottage cheese
1 tsp vanilla extract ( optional)
1 tbsp zero calorie sweetener or 1 tbsp honey (optional)
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tbsp apple cider vinegar
a tiny bit of butter ( to bake the pancakes)
- For the blueberry syrup:
250 grams blueberries (fresh or frozen)
1 or more tbsp zero calorie sweetener or honey to taste
1 tsp cinnamon
1/2 tsp vanilla extract ( optional)
- To serve:
skyr or greek yogurt
extra powdered xilitol/erythritol or a drizzle of honey
Directions
- Blend the oats, eggs and cottage cheese with the vanilla, baking soda and baking powder in a blender until a very smooth batter. You can also use a stick blender.
- Next, mix in the vinegar and stir. Bubbles will form because of the reaction of the baking soda with the acidity of the vinegar.
- Heat a large frying pan over medium heat. You can use a brush to spread a tiny bit of butter in the pan. Then bake the pancakes. Flip over when you see bubbles arise at the top and the top looks cooked. The pancakes should look golden brown. Bake them for about 3-4 minutes per pancake.
- Meanwhile, make the blueberry syrup. Rinse the berries well and add to a sauce pan. Let them come to a simmer until the berries release their juices.
- With a masher or fork, mash the berries until they are broken up and the berries are saucy and syrupy. Add your desired sweetener and cinnamon and adjust to taste.
- Serve the pancakes with a dollop of skyr or greek yogurt and swirl the blueberry syrup on top.
- Dust with some extra powdered erythritol/xilitol or drizzle some extra honey on top, if desired.
Notes
- 1 serving size is 4 pancakes per person with 2 tbsp skyr + 3 tbsp blueberry syrup.
