This recipe makes a great side dish or can be part of the traditional english breakfast. But you could also have it for dinner. It’s a dinner full of nutrients that’s delicous served with a chunk of toasted sourdough bread.

Ingredients:
- 750 grams cherry tomatoes (halved) or regular tomatoes, cut in chunks
- 1 can of white beans, including the bean water
- 3 cloves of garlic
- 1 onion
- Olive oil
- 1 vegetable stock cube
- 1 Bay leaf
- 3 tsp sugar
- Sea salt + pepper
Method:
- Put a skillet on medium low heat and add olive oil, the onion and garlic. Sauté until fragrant.
- Add the tomatoes and let them cook for about 10 minutes until they get soft , caramelized and release their juices.
- Then, add the white beans, bean water and bay leaf to the tomatoes and let it come to a boil. Let simmer for about 20 minutes on low heat.
- Season with the sugar , sea salt and pepper.
