Ingredients
125 grams rye flour
75 grams honey
40 grams butter or coconut oil
1 egg
75 grams chocolate chips
1 tsp vanilla extract
1 tsp baking powder
Pinch of sea salt or more to taste
Directions
- Preheat oven to 175c. Mix butter and honey together with a mixer until soft.
- Add the egg and the vanilla extract and mix well.
- Add the rye flour, salt, baking powder and chocolate chips and mix.
- Chill the dough for half an hour to make it more easy to handle.
- Use a cookie scoop to divide the dough into 12 cookies or use your hands to make 12 round balls.
- Flatten them a little with your hands. Press some extra chocolate chips onto the cookies.
- Bake for about 12-15 minutes, depending on how crispy you’d like the cookies to be. Let them cool off completely before eating.
