Making your own granola is super fun and you get to control what ingredients you choose. This granola recipe is particularly fun because it’s a quick version of the original. Instead of baking the oats in the oven, we’re going to roast it in a frying pan. After letting it cool for a little, you just add the dried mulberries and you end up with a delicious and crispy result. It’s great to make on busy mornings or to satisfy sudden cravings, without having to put out all the efforts.

This easy and quick sugar free mulberry and almond granola is sweet, crunchy and nutty, with the warm taste of cinnamon and coconut. The dried mulberries are chewy and taste like honey. They provide a lot of anti-oxidant properties and are one of the foods that contain a high concentration of resveratrol, the main compound that makes red wine so healthy ( in moderation of course). I absolutely love dried mulberries and they are a delicious addition to this granola.

A lot of granola recipes call for a lot of sweeteners and fats, making it too heavy on the calories and unwanted sugar rushes we want to avoid. This granola recipe is made completely sugar free. It is sweetened with erythritol or xylitol or , if you wish, a little maple syrup. The fat content is also lower. It only calls for a little coconut or nut butter for some healthy fats.

Enjoy this quick and easy mulberry and almond granola together with some fresh fruit and yogurt for a super healthy and delicious breakfast or snack.

Ingredients:

  • 120 grams of oats
  • 2 tbsp slivered almonds
  • 3 tbsp erythritol/xilitol or maple syrup
  • 25 grams coconut butter or nut butter of choice
  • 1 tbsp apple sauce
  • 1 1/2 tsp cinnamon
  • pinch of salt
  • 2 tbsp dried mulberries

Method:

Add all the ingredients except for the mulberries in a frying pan and roast on low heat until golden in colour and fragrant, while stirring continously to prevent it from burning. It will crisp up while it cools. When cooled, add the dried mulberries. Keep in a well covered jar. Enjoy it with your favorite fruit, yogurt or plant-based milk.
