Easy + quick weeknight dinner

If you’re a fan of easy dinners, I’m sure you have heard of traybake dinners. They are so convenient for the lazy/busy/tired cook!

I love to cook actually , and I can enjoy whipping up dishes that are elaborate and require a slow approach. But I find myself preferring the easier route most of the time.

Not because I’m lazy or anything, but I just don’t always see the point in complicated food when easy to make dinners with less ingredients can equally be as good or maybe even better!

One of my favorite ways of cooking fast + easy these days is roasting everything on a baking tray, while I’ve got time to do other chores in the meantime.

This greek traybake with veggies in tomatosauce + vegan meatballs is such an easy and delicious recipe that you can whip together in seconds, put it in the oven, while you can just relax in the meantime. Before you know it, dinner is ready + you’re ready to eat.

What ingredients do you need to make this greek traybake with veggies in tomato sauce + vegan meatballs recipe?

To make the recipe, you’re going to need the following ingredients:

  • red peppers 
  • zucchini 
  • mushrooms 
  • cherry tomatoes 
  • green asparagus or green beans
  • vegan meatballs 
  • tomato passata 
  • olive oil
  • a tiny bit of sugar 
  • salt + pepper 
  • feta 
  • chopped dill + parsley 

Or: replace all veggies with any vegetable you like!

How to make this recipe?

Making this recipe is super easy! After you’ve prepared the vegetables and cut them in evenly sized chunks, you layer them onto a large baking tray. Drizzle some olive oil on top and season with salt + pepper. Let the veggies bake for about 25 minutes or until soft and cooked. Next, add the tomato sauce + the vegan meatballs and bake for a short while. Garnish the traybake with the feta ( optional ) and some chopped greek herbs.

Recipe tips + suggestions

Here are some tips + suggestions to make this recipe a succes:

  • I’m all about not wasting anything, so this dish is perfect for using those leftover veggies that you have lying around. You can use any veggie, but note that the baking time may vary. Cutting the veggies in evenly sized bits may help them cook evenly.
  • If you want to make this dish vegan, simply leave the feta out.
  • This traybake tastes good with some sides. You could eat it with a chunk of bread or some cooked potatoes, rice or salad on the side.
  • To make it more filling, try adding some cooked chickpeas or lima beans to the dish. Stir them through the veggies at the same time when you add the tomato sauce + vegan meatballs

This greek traybake with veggies in tomato sauce + vegan meatballs is a super easy weeknight dinner full of nutritious veggies!

Ingredients

  • 2 red pointed peppers, sliced

  • 2 zucchini, sliced in half moon shape

  • 200 grams mushrooms, halved

  • Hand full of cherry tomatoes, halved

  • 150 grams green asparagus, cut into 3 cm pieces

  • 1 packet of vegan meatballs

  • 350 ml. tomato passata ( about 1 can)

  • 1 tsp olive oil

  • 1 tbsp sugar

  • Salt + pepper

  • Feta

  • Chopped dill + parsley

Directions

  • Preheat oven to 220 c.
  • Roast vegetables with olive oil , salt + pepper for about 25 minutes until almost done.
  • Add the tomato passata and sugar and season well.
  • Arrange the vegan meatballs on top. Roast for another 15 minutes or more until the sauce and veggies are sweet and tender.
  • Add some crumbled feta ( optional) and chopped herbs on top.
  • Delicious served with a chunk of bread and a green salad on the side.
  • Enjoy!

Notes

  • If you want to use different vegetables, go ahead! Cut them in evenly chunks to ensure evenly baking.
  • Want to make this dish vegan? Leave out the feta.
  • Make this dish more filling by adding some cooked, canned beans in step 3.
  • This traybake tastes good with some salad, bread or rice/potatoes on the side.
