This recipe for homemade white beans in tomato sauce is so easy to prepare and so much tastier than the canned variety! This recipe uses fresh sweet cherry tomatoes and a can of white beans.

This dish looks really humble and it may remind you of a peasant dish, but don’t be fooled by its plain looks. The flavors are outstanding. The beans are creamy and the tomatoes are cooked until tender, caramelized and sweet.

The health benefits of beans are outstanding too! Did you know that the oldest people in the world, the blue zones centenarians, all consume beans and legumes in their diet regularly? Beans may seem humble and plain, but they are nutrient powerhouses! They are a staple in the diets of the oldest living people on this planet!

These homemade white beans in tomato sauce dish is also completely vegan and budget friendly as well. You don’t need a lot of ingredients to make it, but it’s chockfull of nutrients. The fibers in the beans, make this dish really filling.

This recipe makes a great side dish or can be part of the traditional english breakfast. But you could also have it for dinner. It’s a dinner full of nutrients that’s delicous served with a chunk of toasted sourdough bread.

Servings: 2

Ingredients:

  • 750 grams cherry tomatoes (halved) or regular tomatoes, cut in chunks
  • 1 can of white beans, including the bean water
  • 3 cloves of garlic 
  • 1 onion 
  • Olive oil
  • 1 vegetable stock cube 
  • 1 Bay leaf
  • 3 tsp sugar 
  • Sea salt + pepper 

Method:

  1. Put a skillet on medium low heat and add olive oil, the onion and garlic. Sauté until fragrant. 
  2. Add the tomatoes and let them cook for about 10 minutes until they get soft , caramelized and release their juices. 
  3. Then, add the white beans, bean water and bay leaf to the tomatoes and let it come to a boil. Let simmer for about 20 minutes on low heat. 
  4. Season with the sugar , sea salt and pepper. 
  5. Enjoy !
