These honey sweetened rye chocolate chip cookies are made with rye flour and sweetened with honey. They are a healthier alternative to regular cookies full of sugar, fat and refined flour. They are soft on the inside and a little crispy on the outside.

These cookies are a healthier alternative to regular cookies full of white sugar and refined flour. The amount of butter that is used is also significantly lower. They contain healthy fiber and they are low in calories, only 108 calories a cookie.

The cookies are made with healthier ingredients such as:

  • Rye flour

Rye flour and rye bread are known to lower cholesterol, aid in blood sugar control, are high in healthy fibers , may aid in digestive health, can help you feel full for longer and may reduce inflammation and prevents diseases such as cancer.

  • Honey

While honey is of course a sweetener and should be eaten in moderation, it still has many benefits over eating processed white sugar.

Honey is rich in nutrients and health-promoting plant compounds such as polyphenols. It’s rich in anti-oxidants such as flavonoids and phenolic acids. It has anti-bacterial properties when applied topically on the body and has benefits over white sugar when it comes to blood sugar regulation.

Researchers have found that the anti-oxidants in honey may help protect against metabolic syndrome and type 2 diabetes. Honey may increase adiponectin levels, a hormone that reduces inflammation and improves blood sugar regulation.

What ingredients do you need to make these healthy rye sweetened chocolate chip cookies?

You don’t need a lot of ingredients to make these cookies. The ingredients to make the cookies are:

  • rye flour
  • honey
  • egg
  • butter or coconut oil
  • vanilla extract
  • baking powder
  • sea salt

How to make the cookies?

The cookies are super easy and quick to prepare. The cookie dough can be made in one bowl only!

Mix the wet ingredients in a bowl and add the dry ingredients next. Let the dough firm up in the fridge, scoop cookies on a baking tray and bake them for about 12-15 minutes, depending on how crispy you’d like them. That’s it!

Recipe tips + suggestions

  • If you don’t have rye flour, you can also use wholewheat or spelt flour to make these cookies.
  • To make the cookies vegan, just replace the honey with maple syrup or agave and replace the butter with a dairy free butter alternative. I also think coconut oil would work.
  • Use coconut oil instead of butter to make them lactose free.
  • If you don’t have butter or coconut oil, olive oil or sunflower oil would also work.
  • For some variation, you can mix in different add-ins , such as chopped nuts or dried fruit or anything you’d like.

These honey sweetened rye chocolate chip cookies are made with rye flour and sweetened with honey. They are a healthier alternative to regular cookies full of sugar, fat and refined flour. They are soft on the inside and a little crispy on the outside.

Ingredients

  • 125 grams rye flour

  • 75 grams honey

  • 40 grams butter or coconut oil

  • 1 egg

  • 75 grams chocolate chips

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • Pinch of sea salt or more to taste

Directions

  • Preheat oven to 175c. Mix butter and honey together with a mixer until soft.
  • Add the egg and the vanilla extract and mix well.
  • Add the rye flour, salt, baking powder and chocolate chips and mix.
  • Chill the dough for half an hour to make it more easy to handle.
  • Use a cookie scoop to divide the dough into 12 cookies or use your hands to make 12 round balls.
  • Flatten them a little with your hands. Press some extra chocolate chips onto the cookies.
  • Bake for about 12-15 minutes, depending on how crispy you’d like the cookies to be. Let them cool off completely before eating.
