These pancakes are super healthy! They are made with heart healthy oats that contains fiber, anti-oxidants, lowers cholesterol and are great for your skin. The fiber in the oats are whole grain and make you feel full for longer. They don’t cause those nasty spikes in your blood sugar, making you feel drowsy and tired, but instead gradually provide you with energy throughout the day.

The pancakes also have a high protein content. The cottage cheese, the eggs + the skyr in this recipe give the pancakes a high protein content. 1 serving* of these pancakes with the blueberry syrup and some skyr yogurt contains 18,5 grams of protein, making these pancakes a great treat to have before of after your workout.

The pancakes are served with some sweet homemade blueberry syrup. The syrup is made with frozen or fresh blueberries + some zero calorie sweetener, making it completely sugar free and better for your health.

How do the pancakes taste?

The pancakes taste amazing! They are super fluffy and soft. The pancakes go together well with the blueberry syrup + the skyr/greek yogurt. It tastes sweet, tangy + creamy.

What ingredients do you need to make these pancakes?

To make these oat + cottage cheese high protein pancakes, you will need the following ingredients:

  • oats
  • eggs
  • cottage cheese
  • vanilla extract
  • zero calorie natural sweetener such as erythritol or honey
  • baking soda
  • baking powder
  • apple cider vinegar
  • a tiny bit of butter
  • blueberries ( fresh or frozen)
  • cinnamon

How to make these easy oat + cottage cheese high protein pancakes

These pancakes are ridiculously easy to make! It’s such a simple recipe!

To make the batter, you just add all the ingredients except for the butter/oil in a high speed blender or use a stick mixer and blend it until completely smooth. Then, bake them in a frying pan until fluffy. Meanwhile, you make the blueberry syrup by just heating up the ingredients in a saucepan and let it simmer for a short while. Serve the pancakes with the blueberry syrup and a few dollops of skyr or greek yogurt.

Recipe tips + suggestions

Here are some tips + suggestions to make this recipe a success:

  • Bake the pancakes in a pan on medium to high heat. The pan should be hot before pouring in the batter preventing the pancakes from sticking onto the pan.
  • You can keep the pancakes warm on a plate in the oven on a low heat setting while baking the pancakes.
  • If you want the process to be faster, use multiple pans to bake the pancakes.
  • If you don’t have a zero calorie natural sweetener at home such as erythitol or xilitol or if you don’t want to use that, you can replace it with some honey, agave, maple syrup etcetera. Note that the calorie content will change.
  • You could replace the oats with whole wheat flour.
  • Don’t have blueberries? You could of course use other berries if you like to make the syrup , or simple replace the syrup with a little honey or other sweetener and serve with fresh fruit only.
  • If you want to add even more protein to the pancakes, add some scoops of extra protein powder to the batter.

These healthy oat + cottage cheese pancakes are super fluffy! They make an excellent pre workout breakfast as they are full of protein!

Ingredients

  • For the pancake batter:
  • 75 grams oats

  • 3 eggs

  • 150 grams cottage cheese

  • 1 tsp vanilla extract ( optional)

  • 1 tbsp zero calorie sweetener or 1 tbsp honey (optional)

  • 1/4 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tbsp apple cider vinegar

  • a tiny bit of butter ( to bake the pancakes)

  • For the blueberry syrup:
  • 250 grams blueberries (fresh or frozen)

  • 1 or more tbsp zero calorie sweetener or honey to taste

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract ( optional)

  • To serve:
  • skyr or greek yogurt

  • extra powdered xilitol/erythritol or a drizzle of honey

Directions

  • Blend the oats, eggs and cottage cheese with the vanilla, baking soda and baking powder in a blender until a very smooth batter. You can also use a stick blender.
  • Next, mix in the vinegar and stir. Bubbles will form because of the reaction of the baking soda with the acidity of the vinegar.
  • Heat a large frying pan over medium heat. You can use a brush to spread a tiny bit of butter in the pan. Then bake the pancakes. Flip over when you see bubbles arise at the top and the top looks cooked. The pancakes should look golden brown. Bake them for about 3-4 minutes per pancake.
  • Meanwhile, make the blueberry syrup. Rinse the berries well and add to a sauce pan. Let them come to a simmer until the berries release their juices.
  • With a masher or fork, mash the berries until they are broken up and the berries are saucy and syrupy. Add your desired sweetener and cinnamon and adjust to taste.
  • Serve the pancakes with a dollop of skyr or greek yogurt and swirl the blueberry syrup on top.
  • Dust with some extra powdered erythritol/xilitol or drizzle some extra honey on top, if desired.

Notes

  • 1 serving size is 4 pancakes per person with 2 tbsp skyr + 3 tbsp blueberry syrup.
