This vegetarian traybake recipe with sauerkraut and pumpkin is such an easy and quick dinner to throw together. The only thing you need to do is cut some veggies and put them on a tray along with the sauerkraut, let it bake, while you can meanwhile focus on other things. Then, before you know it, dinner’s ready.

Many preparations for sauerkraut require you to cook it for a long time before adding to your dish. No need to do that with this recipe. You can use it straight away, because the cooking happens in the oven, along with the other vegetables, making the preparation a breeze.

The sauerkraut pairs well with the pumpkin and cheese and the dried cranberries and apple add a sweet touch to the dish that balances the sour taste of the sauerkraut. The dish is good on its own, but to make things even more delicious, make a simple cumin yogurt sauce with ingredients you probably already have in your kitchen, to go with it.

This sauerkraut, pumpkin and apple traybake is not only delicious, but also incredibly healthy. Sauerkraut is a great source of nutrients and vitamins, such as vitamin C and iron. It’s a fermented food that acts as a probiotic in the gut which can strengthen our immune system. It can help our body fight against inflammation, supports heart health, can improve our mood and behavior and may reduce the risk of cancer.

Even more reason to add sauerkraut to our diets, if you ask me, and this dish is a great way to do so. This dish is filling, packed full of vibrant veggies and is low carb.

Notes:

  • Drain your sauerkraut well, but don’t wash it or you’ll remove the live bacteria
  • I used a lower fat cheese, to minimize the amount of saturated fat
  • If you don’t have turmeric and cumin, you can use curry powder instead.

Servings: 2-3

Ingredients:

  • 500 gr. fresh sauerkraut , drained well
  • 400 gr. pumpkin, peeled and cut into 1 cm chuncks
  • 1 large or 2 smaller sized organic apples, cut into wedges
  • 200 gr. sliced mushrooms
  • 2 tbsp dried cranberries or raisins
  • 100 gr. grated cheese
  • 1 tbsp of pine nuts or mixed seeds of choice
  • olive oil
  • salt + pepper

For the sauce:

  • 5 tbsp greek yogurt
  • 1/2 turmeric
  • 1/2 tsp ground cumin
  • 3 tbsp honey
  • salt + pepper

Method:

Preheat oven to 200c. Layer the sauerkraut in a large baking tray and arrange the pumpkin, apple, mushrooms and dried fruit on top. Drizzle with some olive oil and season well with salt and pepper. Cover the dish with the grated cheese and sprinkle the seeds on top. Bake in the oven for about 30-35 minutes, or until golden brown and the pumpkin is soft.

Mix the ingredients for the sauce together and season well with salt and pepper. Serve together with the traybake.
