A super healthy + sweet snack

If you’re looking for a healthy snack or even something with a cup of tea or coffee, then this sorghum chocolate chip + coconut banana bread would be perfect. It’s a really health conscious alternative to sugar laden cakes, cookies and granola bars. It’s healthy enough to eat as breakfast and as a treat to take along the road, when you’re heading over to your work. It’s great to give to your kids as a healthy snack during lunch at school.

  • made with a 100 % whole grain flour

I like that this banana bread is also a 100 % wholegrain because I used a combination of brown rice flour with sorghum flour, which is also wholegrain. But although it’s wholegrain, the banana bread has a beautiful light and golden color.

  • completely sugar free

This sorghum chocolate chip + coconut banana bread is completely sugar free, except for the natural occurring sugar in the bananas. It tastes deliciously sweet though and you will not miss the sugar or sweeteners in this bread.

  • Gluten free + lactose free

This banana bread is suitable for those with sensitivities to gluten + lactose.

How does this sorghum chocolate chip + coconut banana bread taste?

The banana bread turned out pretty good! The result isn’t dry but holds together and is still moist. There’s the subtle taste of the ripe bananas mingled with the chopped dark chocolate and some texture from the desiccated coconut. I really like the combination of those flavors together. It’s basically a healthy version of pound cake, which I love.

What ingredients do you need to make this sorghum, chocolate chip + coconut banana bread?

To make this banana bread, you’ll need the following ingredients:

  • sorghum flour
  • brown rice flour
  • ripe bananas
  • eggs
  • liquid stevia
  • xylitol or sweetener of choice
  • dark chocolate
  • desiccated coconut 
  • vanilla extract
  • baking powder
  • Pinch salt

How to make this sorghum chocolate chip + coconut banana bread

To make the bread, just mix the dry ingredients in a bowl and mix the wet ingredients in a blender. Combine everything together, mix briefly and poor in a loaf tin. Bake for about 45-50 minutes until done. It’s a really simple and easy recipe.

What is sorghum flour?

Have you ever heard of sorghum flour? It’s a 100 % gluten free flour with a mild and slightly sweet taste. It’s a wholegrain flour that has a light beige color. It can be used to make all kinds of baked goods, such as cakes, waffles, muffins , pancakes and so much more.

Sorghum flour is really nutritious. It’s rich in vitamins and minerals such as B vitamins which plays a role in metabolism and healthy skin and hair. It’s a source of magnesium, potassium, phosphorus, iron and zinc. It’s packed with fiber, anti-oxidants and protein. Eating a diet rich in anti-oxidants can lower oxidative stress and inflammation in our body. And eating enough fiber can help prevent weight gain, can lower cholesterol, prevent diabetes and can promote gut health.

Like many other gluten free kind of flours, it’s not recommended to use it on it own. It’s best used in combination with another gluten free flour, such as rice flour or buckwheat flour. Baking with only sorghum flour alone, could result in baked goods with a sandy, crumbly and dry texture.

Recipe suggestions

This recipe can be adapted to your own taste. I change up the flavors all the time. It’s good without the add ins and can stand on its own. But if you want to be creative, it’s a blank canvas for all kinds of flavor combinations.

You could add:

  • chopped nuts
  • dried fruit
  • fresh fruits, such as blueberries or apple chunks
  • a drizzle on top

This healthy banana bread is made with nutritious sorghum flour. It’s gluten and sugar free. Enjoy with a cup of tea or coffee or as a healthy snack to be enjoyed every moment of the day!

Ingredients

  • 100 grams sorghum flour

  • 100 grams of brown rice flour

  • 4 ripe bananas

  • 3 eggs

  • 1 tbsp xylitol or sweetener of choice

  • Stevia , to taste

  • 50 grams dark chocolate, chopped

  • 1 tbsp desiccated coconut

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • Pinch sea salt

Directions

  • Preheat your oven to 180 c.
  • Mix the brown rice flour, sorghum flour, dessicated coconut, chocolate chips, baking powder and salt in a bowl.
  • Add the bananas , xylitol, stevia, vanilla extract and eggs in a blender and blend until super smooth. 
  • Add to the dry ingredients and mix.
  • Bake for 45-50 minutes and check if done with a toothpick.
