These white bean blender brownies are delicious and super healthy! They are made with creamy white beans instead of flour. They are sugar free, fat free, gluten free and decadent nonetheless. They’re easy + quick to make. Just blend all the ingredients in a blender and bake!

Beans in a brownie?

Using beans in brownies isn’t something new anymore. Scrolling the internet, you’ll come across all kinds of recipes for brownies using black beans, kidney beans, white beans, chickpeas and so on.

I must say, the idea of using beans in dessert seems weird, but it actually isn’t. Asian cultures for example, traditionally use beans in all kinds of dessert. Beans are used as a sweet topping on coconut ice cream, are put in drinks or are made into a custard, like this popular Thai custard dessert, made of coconut milk, mung beans and eggs.

So putting beans in a brownie is really not such a crazy idea. But our western palates still associate beans with salty dishes instead of sweet, so we don’t want to be able to detect the taste and structure of beans in our sweet dishes.

White beans have a mild + neutral taste

I’ve tried a lot of recipes for bean based brownies in the past and liked some of them, but unfortunately not all of them. Sometimes, the beans were still detectable and the structure of the brownies was not right. I love beans and legumes, but I don’t want to be able to taste them in my dessert.

I’m using white beans for this recipe because of their mild and neutral flavor. They have a smooth and creamy consistency. Because of this, they can’t easily be detected when blended into the brownie batter.

White bean blender brownies ingredients

For these brownies, we are using the following ingredients:

  • white beans
  • eggs
  • xilitol or other natural zero calorie sweetener (1:1 sugar ratio) or same amount of dates
  • liquid stevia (or more zero sugar sweetener of choice)
  • cacao powder
  • apple sauce
  • chocolate chips (optional)
  • baking power, sea salt + vanilla extract

Why these white bean blender brownies are healthy

These are probably the healthiest brownies you will ever come across.

A lot of the “healthy” brownie recipes out there, proclaim that they’re healthy, when in fact they contain a ton of sugar or other sweeteners. Not to mention the amount of fat and calories. 

These white bean brownies however, do not contain any of that. They’re packed with gut healthy fiber and nutrients from the white beans, they’re also zero sugar and full of cacao, a boosting ingredient for your overall mood. 

Because this recipe doesn’t use regular flour, but white beans instead, it’s also suitable for those with gluten allergies/sensitivities.

These brownies would make such a great snack to have on hand when you’re in that time of the month and that chocolate craving hits you. These brownies can be enjoyed a 100% guilt free. 

These brownies are a low calorie treat

If you want to lose weight, counting calories can really be helpful in reaching your weight loss goals. When on a calorie deficit, you’ll still want to be able to enjoy a sweet treat now and then, but without having to sacrifice on your diet. Choosing a low calorie treat can be the solution to this problem.

These brownies make a nutritious and low calorie dessert option. They contain only 85 calories for a regular sized brownie (slightly more, when you add the chocolate chips), making them the perfect treat when you’re trying to lose weight!

How do these white bean blender brownies taste?

Not only are these white bean brownies super nutritious, they taste really good too! I mean, I gave some to my husband, who is a terribly picky eater, and he loved them and didn’t notice the secret ingredient: white beans.

These brownies are moist, gooey and have a mousse like texture. They’re lighter than a typical brownie, but they’re decadent nonetheless. It’s really a miracle how a list of such healthy ingredients can make a brownie that tastes so good AND is actually healthy for your body.

How to make these white bean blender brownies

What’s also fun about this recipe is that the brownies are super easy to make! You just blend all the ingredients in your blender until completely smooth and poor it in a loaf tin. They’re done baking in less than 15 minutes and can be eaten almost instantly after baking. 

And If you feel like adding some chocolate chips, dried fruit, chopped nuts, just go ahead! It would make these brownies even better. Although this recipe doesn’t even need it, because it’s good as it is.

These white bean blender brownies are delicious and super healthy! They are made with creamy white beans instead of flour. They are sugar free, fat free, gluten free and decadent nonetheless. They’re easy + quick to make. Just blend all the ingredients in a blender and bake!

Ingredients

  • 100 grams white beans

  • 3 eggs

  • 50 grams xilitol ( or other zero calorie sweetener ( 1:1 sugar ratio , or : 50 grams dates)

  • 1/2 tsp liquid stevia (or more zero calorie sweetener)

  • 40 grams cacao

  • 100 grams apple sauce

  • 1 tbsp chocolate chips ( optional)

  • 1/8 tsp sea salt or more to taste

  • 1 tsp baking powder

  • 1 tsp vanilla extract

Directions

  • Preheat oven to 180 c. Line a loaf tin with natural parchment paper.
  • Blend everything in a blender until smooth.
  • Taste and adjust sweetness and saltiness to your own liking.
  • Poor in a tin, add some chocolate chips on top and bake on 180c for 15 minutes until the top is set but still slightly wiggly.
  • Let cool and slice into 8 brownies.

Notes

  • If you don’t have xilitol, use 50 grams of dates instead and maybe add a little more stevia to make it as sweet as you wish. 
  • I wanted these brownies to be low in calories, so I did not add any mix ins. But they would taste great with some additions such as chopped chocolate, nuts etc. But that is totally optional because they taste good either way. 
  • I used a loaf tin to bake these brownies in. Line the tin with parchment before adding the batter. If you use a normal brownie tin, know that the brownies will become a bit flatter. 
  • You can use different cooked beans for this recipe , however ,I prefer to use white beans because of their mild, neutral flavor and creamy texture.
